1 cup pumpkin flesh
1 cup organic dates
1 tbsp organic coconut oil
1/2 cup organic almonds
1/2 cup organic pumpkin seeds
1 Tbsp Organic Cocoa Powder
1 teaspoon organic ground cinnamon
1 teaspoon organic vanilla extract

Soak dates in clean fresh water overnight or for 6-8 hours. remove the pits.
Grind almonds and pumpkin seeds together in a blender or coffee grinder.
In a food processor, blend the dates, pumpkin flesh, coconut oil, cocoa, cinnamon and vanilla until smooth.
Add ground almonds and pumpkin seeds and process until smooth.
Grease a baking tray lightly with a spoon in coconut oil and mix.
Bake at 170 C (150 C for fan-assisted oven) for 35-40 minutes.

1 cup organic sweet potatoes

2 tablespoons organic cocoa powder

Soak the dates overnight or for 6-8 hours and remove the pits.
Steam the sweet potatoes for about 20 minutes until soft and cut into small pieces. I usually steam sweet potatoes full because they are much easier to peel and cut when they are soft.
Place the dates, sweet potatoes, hazelnuts, coconut oil and cocoa in a food processor and process until smooth.
Add vanilla extract and cinnamon and process again to allow all flavors to blend.
Spread a spoonful of coconut oil on a small baking tray and then pour the mixture. Use a hot knife to make indentations for 6 brownies and bake at 170°C (150C for a fan-assisted oven) for 45-50 minutes.
